Cineole gives cardamom is penetrating eucalyptus flavor. Several minor flavor compounds give cardamom its deep floral citrus flavor. The green cardamom works well in sweet and savory dishes. The black cardamom is best suited for savory dishes. It also contains cineole, but the other flavor compounds give the black cardamom a smoky flavor and the black cardamom contains eugenol, with its clove-like taste.
